A refreshing salad featuring ripe tomatoes and cucumbers, perfect for summer gatherings.

Ingredients

  • 4 large ripe tomatoes (diced)
  • 2 medium cucumbers (peeled and sliced)
  • 1/2 red onion (thinly sliced)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the diced tomatoes, sliced cucumbers, and thinly sliced red onion.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, sugar, salt, and pepper until well mixed.
  • Pour the dressing over the tomato and cucumber mixture and toss gently to combine.
  • Add the chopped basil leaves and toss again to distribute evenly.
  • Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

For added flavor, consider using heirloom tomatoes.
