A delicious low-carb casserole featuring roasted spaghetti squash topped with cheeses and fresh basil, perfect for a comforting yet healthy meal.

Ingredients

Vegetables

  • 1 medium spaghetti squash (2 ½ to 3 pounds)
  • 1 tablespoon olive oil
  • 1 1/2 cups marinara sauce (plus extra for serving)
  • 1 cup grated provolone or mozzarella cheese
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated parmesan cheese
  • to taste black pepper black pepper
  • for topping fresh basil leaves fresh basil leaves (for topping)

Instructions 

  • Preheat oven to 400°F (200°C). Roast the squash until tender, about 25-30 minutes sliced or 50-60 minutes whole.
  • Cool the squash, then scrape out the strands with a fork. Mix with marinara and cheese.
  • Spread the mixture on a baking sheet, top with ricotta and parmesan cheeses.
  • Broil until golden and crisp, about 6-8 minutes. Season with black pepper and garnish with basil.

Notes

Keep a close eye during broiling to prevent burning.
