A delicious low-carb casserole combining roasted spaghetti squash with savory ground beef and melted cheese, perfect for a comforting meal.

Ingredients

Vegetables

  • 1 medium Spaghetti squash
  • 1 lb pound Lean ground beef
  • 1 small Onion
  • 3 cloves Garlic (minced)
  • 1 can (14.5 oz) oz Diced tomatoes
  • 2 tbsp tablespoons Tomato paste
  • 1 cup cups Marinara sauce
  • 1 tsp teaspoon Italian seasoning
  • 1 cup cups Mozzarella cheese (shredded)
  • 2 tbsp tablespoons Olive oil
  • to taste Salt
  • to taste Pepper

Instructions 

  • Preheat oven to 400°F (204°C). Cut squash, drizzle with olive oil, season, and roast for 35–40 minutes.
  • Let squash cool, then scrape flesh into strands. Brown beef with onion and garlic, add tomatoes, tomato paste, marinara, and Italian seasoning.
  • Mix squash strands into the beef mixture, transfer to baking dish, top with cheese, and bake at 375°F (190°C) for 20 minutes.

Notes

For a vegetarian version, substitute the beef with plant-based protein or vegetables.
