A refreshing and healthy salad combining the sweetness of strawberries with the crunch of almonds and the freshness of spinach. Perfect as a light lunch or a side dish.

Ingredients

Salad Ingredients

  • 1 large romaine lettuce (head)
  • 3 large handfuls spinach (about 3 packed cups)
  • 10 strawberries
  • 1/2 cup poppy seed dressing (homemade or bottled)
  • 1/4 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1/2 cup feta cheese

Instructions 

  • Chop romaine lettuce, wash and dry lettuce and spinach, and chop strawberries.
  • Add greens to a bowl and toss with poppy seed dressing.
  • Top with strawberries, cranberries, almonds, and feta cheese.
  • Serve immediately.

Notes

Add grilled chicken or chickpeas for a heartier meal.
