Ingredients

Salad

  • 4 cups baby spinach leaves (washed and dried)
  • 2 cups fresh strawberries (sliced)
  • 0.5 cup feta cheese (crumbled)
  • 0.75 cup walnuts (whole or chopped)

Dressing

  • 0.25 cup lemon juice (freshly squeezed)
  • 0.25 cup olive oil (extra virgin)
  • 1.5 tablespoons honey
  • 1 tbsp old fashioned Dijon mustard
  • 0.125 tsp sea salt
  • 0.5 tbsp poppy seeds

Instructions 

  • Combine spinach, strawberries, feta, and walnuts in a bowl.
  • Blend lemon juice, olive oil, honey, mustard, and salt. Mix in poppy seeds.
  • Pour dressing over salad and toss gently.
  • Serve immediately.

Notes
