A delicious and healthy low-carb dinner featuring tender chicken breasts filled with a flavorful spinach and cheese mixture.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts

Filling

  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • to taste salt and pepper

Cooking Oil

  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix spinach, cream cheese, Parmesan, garlic, onion powder, salt, and pepper.
  • Create pockets in chicken breasts and stuff with the mixture.
  • Sear chicken in olive oil for 3-4 minutes per side.
  • Bake in oven for 20-25 minutes until cooked through.
  • Rest briefly, then serve warm.

Notes

Secure stuffed chicken with toothpicks if needed to prevent filling from spilling out.
