Ingredients

Salad

  • 2 cups cooked chicken, shredded or diced
  • 1 cup fresh strawberries, sliced
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup toasted slivered almonds

Dressing

  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • to taste Salt and pepper
  • Lettuce or croissants for serving (Optional)

Instructions 

  • Combine chicken, strawberries, celery, and red onion in a bowl.
  • Whisk together mayonnaise, yogurt, lemon juice, honey, salt, and pepper.
  • Pour dressing over chicken mixture and stir gently.
  • Stir in toasted almonds.
  • Taste and adjust seasonings.
  • Serve immediately or chill. Serve on lettuce or in croissants.

Notes

For a lighter version, use light mayonnaise and more Greek yogurt.
