Ingredients

Salad

  • 2 pounds russet potatoes (peeled and cubed)
  • 2 stalks celery (diced)
  • 0.25 cup red onion (finely chopped)
  • 2 tablespoons fresh chives (chopped)
  • 4 large hard-boiled eggs (chopped)
  • 6 slices cooked turkey bacon (crumbled)

Dressing

  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon paprika

Instructions 

  • Boil potatoes until fork-tender, then drain and cool.
  • Whisk together mayonnaise, sour cream, mustard, vinegar, salt, pepper, garlic powder, and paprika.
  • Mix cooled potatoes with eggs, celery, red onion, bacon, and chives.
  • Pour dressing over potato mixture and fold gently. Refrigerate for at least 1 hour.

Notes

For a creamier salad, add a bit more mayonnaise. Adjust seasonings to taste.
