A flavorful and easy-to-make rice bowl featuring tender chicken, vibrant broccoli, and a sweet-savory sauce, topped with spicy mayo and sesame seeds.

Ingredients

Grains

  • 2 cups uncooked rice

Vegetables

  • 2 small heads broccoli (chopped)

Protein

  • 3 large chicken breasts

Oils & Condiments

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano

Sauces & Liquids

  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with water (for slurry)

Spicy Mayo

  • 1 half cup mayo
  • 1 tbsp sriracha (for spicy mayo)
  • 2-3 tbsp water (for spicy mayo) (adjust as needed)

Toppings

  • to taste sesame seeds for topping

Instructions 

  • Cook rice and set aside.
  • Chop broccoli and set aside.
  • Season chicken with salt, pepper, paprika, chili powder, onion powder, and oregano. Cook in olive oil until golden and cooked through.
  • Steam or sauté broccoli until tender. Mix soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ginger, and slurry. Add to chicken and simmer until thickened.
  • Prepare spicy mayo by mixing mayo, sriracha, and water. Assemble bowls with rice, chicken, broccoli, spicy mayo, and sesame seeds.

Notes

Adjust spice levels and toppings to taste.
