A flavorful and easy-to-make chicken bowl featuring tender chicken, broccoli, and a sticky sauce, topped with spicy mayo and sesame seeds.

Ingredients

Rice

  • 2 cups uncooked rice

Broccoli

  • 2 small heads broccoli (chopped)

Chicken

  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder (sub cornstarch) (mixed with 2 tbsp water to make slurry)
  • 1/2 cup mayo
  • 1 tbsp sriracha (for mayo)
  • 2-3 tbsp water (for mayo thinning)

Toppings

  • sesame seeds (for topping)

Instructions 

  • Cook rice according to package instructions.
  • Chop broccoli and season chicken with spices, then cook chicken in oil until golden.
  • Steam or sauté broccoli until tender, then add sticky sauce and simmer until thickened.
  • Mix mayo, sriracha, and water to make spicy mayo.
  • Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.

Notes

Adjust spice levels and toppings as desired for best flavor.
