A flavorful and easy-to-make bowl featuring tender chicken, broccoli, and rice topped with spicy mayo and sesame seeds.

Ingredients

Rice

  • 2 cups uncooked rice

Vegetables

  • 2 small heads broccoli, chopped

Chicken

  • 3 large chicken breasts

Sauces & Oils

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano

Sauce ingredients

  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with water (to make slurry)

Spicy Mayo

  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 2-3 tbsp water (to thin mayo)

Toppings

  • sesame seeds for topping sesame seeds

Instructions 

  • Cook rice and set aside.
  • Chop broccoli and set aside.
  • Season chicken, cook in skillet until golden and cooked through.
  • Steam or sauté broccoli until tender. Make sauce, add to chicken and simmer until thickened.
  • Mix mayo, sriracha, and water for spicy mayo. Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.

Notes

Use fresh ingredients for best flavor. Adjust spice level to taste.
