1.5cupsfresh strawberries(hulled and sliced)
0.5cupfeta cheese(crumbled into small pieces)
0.25cupred onion(thinly sliced)
0.25cuppecans(toasted and roughly chopped)
Dressing
3tablespoonspoppy seeds
0.25cupextra virgin olive oil
2tablespoonsapple cider vinegar
2tablespoonshoney or maple syrup
1teaspoonDijon mustard

Instructions
Whisk together olive oil, apple cider vinegar, honey/maple syrup, Dijon mustard, salt, and pepper. Stir in poppy seeds and set aside.
Combine spinach, strawberries, feta, and red onion in a large bowl and toss gently.
Drizzle dressing over the salad and toss until well-coated.
