A refreshing and vibrant salad combining the sweetness of strawberries with the earthy notes of spinach, complemented by feta, pecans, and a tangy poppyseed dressing. Perfect as a light lunch or a delightful side dish.

Ingredients

Salad

  • 4 cups baby spinach (thoroughly washed and dried)
  • 1.5 cups fresh strawberries (hulled and sliced)
  • 0.5 cup feta cheese (crumbled into small pieces)
  • 0.25 cup red onion (thinly sliced)
  • 0.25 cup pecans (toasted and roughly chopped)

Dressing

  • 3 tablespoons poppy seeds
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste freshly ground pepper

Instructions 

  • Whisk together olive oil, apple cider vinegar, honey/maple syrup, Dijon mustard, salt, and pepper. Stir in poppy seeds and set aside.
  • Combine spinach, strawberries, feta, and red onion in a large bowl and toss gently.
  • Drizzle dressing over the salad and toss until well-coated.
  • Sprinkle toasted pecans over the salad just before serving.
  • Serve immediately for the freshest taste.

Notes

For a vegan option, substitute the feta cheese with a plant-based alternative and use maple syrup instead of honey.
