These Strawberry Oatmeal Bars are a healthy and delicious treat, perfect for breakfast or a snack.

Instructions 

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, and salt. Mix well.
  • In another bowl, mix together the almond butter, honey (or maple syrup), brown sugar, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the chopped strawberries and lemon juice until evenly distributed.
  • Spread the mixture evenly in the prepared baking pan, pressing it down firmly.
  • Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, cut into bars and serve.

Notes

You can substitute almond butter with peanut butter if desired.
