Ingredients

Salad

  • 4 cups fresh spinach (washed and dried)
  • 2 cups strawberries (hulled and sliced)
  • 1 cup crumbled feta cheese
  • 1/2 cup sliced almonds (optional)
  • 1/4 cup red onion (thinly sliced)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  • Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
  • Combine spinach, strawberries, feta, almonds, and red onion in a large bowl.
  • Drizzle dressing over salad, tossing gently.
  • Let salad sit for 5 minutes before serving.

Notes

Add grilled chicken or shrimp for a heartier meal.
