Ingredients

Salad

  • 4 cups fresh spinach (washed and dried)
  • 2 cups strawberries (hulled and sliced)
  • 1 cup pecans (toasted)
  • 0.5 small red onion (thinly sliced)
  • 0.5 cup crumbled feta cheese (optional)

Dressing

  • 0.25 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • to taste salt and pepper

Instructions 

  • Toast pecans in a skillet until fragrant and golden brown. Let cool.
  • Combine spinach, strawberries, pecans, and red onion in a bowl. Add feta if using.
  • Whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  • Drizzle dressing over salad and toss gently.
  • Adjust seasoning if needed.
  • Serve immediately or chill briefly.

Notes

For a vegan option, omit the feta cheese and use maple syrup instead of honey in the dressing.
