A refreshing and vibrant Strawberry Spinach Salad with candied pecans and a tangy poppy seed dressing. Perfect for a light lunch or a side dish.

Ingredients

Salad

  • 6 cups baby spinach (washed and dried)
  • 1.5 cups fresh strawberries (hulled and sliced)
  • 0.5 cup candied pecans
  • 0.25 small red onion (thinly sliced (optional))
  • 0.5 cup crumbled feta cheese (optional)

Candied Pecans

  • 0.5 cup pecan halves
  • 2 tablespoons granulated sugar
  • 1 tablespoon butter

Poppy Seed Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon poppy seeds
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • to taste Freshly ground black pepper

Instructions 

  • Melt butter, add pecans and sugar, stir until coated and melted. Cool on parchment paper.
  • Whisk olive oil, vinegar, honey, poppy seeds, mustard, salt, and pepper. Set aside.
  • Combine spinach, strawberries, red onion, feta, and candied pecans. Drizzle with dressing before serving.

Notes

For a vegan option, omit the feta cheese and use maple syrup instead of honey in the dressing.
