Ingredients

Salad

  • 6 ounces fresh spinach (washed and dried)
  • 1 pint fresh strawberries (hulled and sliced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup slivered almonds (toasted)
  • 1/4 cup crumbled feta cheese (optional)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  • Combine spinach, strawberries, red onion, almonds, and feta (if using) in a bowl.
  • Whisk olive oil, vinegar, honey, poppy seeds, mustard, salt, and pepper in a small bowl.
  • Pour dressing over salad and toss gently.
  • Serve immediately.

Notes

For a vegan option, omit the feta cheese and use maple syrup instead of honey.
