1pintfresh strawberries(hulled and sliced)
1/4cupred onion(thinly sliced)
1/4cupslivered almonds(toasted)
1/4cupcrumbled feta cheese(optional)
Dressing
1/4cupolive oil
2tablespoonsapple cider vinegar
2tablespoonshoney
1tablespoonpoppy seeds
1/2teaspoonDijon mustard
to tasteSalt and pepper
Instructions
Combine spinach, strawberries, red onion, almonds, and feta (if using) in a bowl.
Whisk olive oil, vinegar, honey, poppy seeds, mustard, salt, and pepper in a small bowl.
Pour dressing over salad and toss gently.

For a vegan option, omit the feta cheese and use maple syrup instead of honey.
