A refreshing and vibrant salad combining the sweetness of strawberries with the earthy flavors of spinach, topped with a tangy poppy seed dressing. Perfect as a light lunch or a side dish for any occasion.

Ingredients

Salad

  • 6 cups fresh baby spinach (washed and dried)
  • 1.5 cups fresh strawberries (hulled and sliced)
  • 0.5 small red onion (thinly sliced)
  • 0.5 cup crumbled feta cheese
  • 0.5 cup toasted pecans or walnuts (roughly chopped)
  • 0.25 cup sunflower seeds (optional)

Dressing

  • 0.25 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • to taste Salt and freshly ground black pepper

Instructions 

  • Whisk together olive oil, apple cider vinegar, honey, lemon juice, Dijon mustard, and poppy seeds. Season with salt and pepper. Set aside.
  • In a large bowl, mix baby spinach, sliced strawberries, red onion, crumbled feta, toasted pecans, and optional sunflower seeds.
  • Drizzle the prepared poppy seed dressing over the salad and toss gently to coat evenly.
  • Serve immediately and enjoy fresh.

Notes

For a vegan option, omit the feta cheese or substitute with a plant-based alternative.
