6cupsfresh baby spinach(washed and dried)
1.5cupsfresh strawberries(hulled and sliced)
0.5smallred onion(thinly sliced)
0.5cupcrumbled feta cheese
0.5cuptoasted pecans or walnuts(roughly chopped)
0.25cupsunflower seeds(optional)
Dressing
0.25cupextra virgin olive oil
2tablespoonsapple cider vinegar
1tablespoonhoney or maple syrup
1tablespoonfresh lemon juice
1teaspoonDijon mustard
1tablespoonpoppy seeds
to tasteSalt and freshly ground black pepper
Instructions
Whisk together olive oil, apple cider vinegar, honey, lemon juice, Dijon mustard, and poppy seeds. Season with salt and pepper. Set aside.
In a large bowl, mix baby spinach, sliced strawberries, red onion, crumbled feta, toasted pecans, and optional sunflower seeds.
