A delicious and wholesome dish featuring bell peppers stuffed with seasoned ground turkey and rice, baked to perfection.

Ingredients

Bell Peppers

  • 4 large bell peppers (any color)

Ground Turkey

  • 1 pound ground turkey

Cooked Rice

  • 1 cup cooked rice

Onion

  • 1 small small onion (chopped)

Garlic

  • 2 cloves garlic (minced)

Diced Tomatoes

  • 1 can (14.5 oz) diced tomatoes

Italian Seasoning

  • 1 teaspoon italian seasoning

Salt and Pepper

  • to taste salt and pepper

Shredded Cheese

  • 1 cup shredded cheese (optional)

Olive Oil

  • 2 tablespoons olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut tops off peppers, remove seeds. Cook onion and garlic in olive oil until translucent.
  • Add ground turkey; cook until browned. Mix in tomatoes, rice, seasoning, salt, and pepper.
  • Stuff peppers with mixture, place in baking dish, top with cheese if desired.
  • Bake covered for 30-35 mins, then uncover and bake 5 mins to melt cheese. Serve hot.

Notes

You can customize the filling with additional vegetables or spices for extra flavor.
