Ingredients

  • 2 cup cherry tomatoes (halved)
  • 1 large cucumber (diced)
  • 1 ripe avocado (diced)
  • 1/2 small red onion (thinly sliced)
  • 1/4 cup basil pesto
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt (to taste)
  • pepper (to taste)
  • fresh basil leaves (for garnish)

Instructions 

  • In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced avocado, and thinly sliced red onion.
  • In a small bowl, whisk together the basil pesto, olive oil, balsamic vinegar, salt, and pepper until well combined.
  • Drizzle the pesto dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocado.
  • Taste and adjust seasoning if necessary, adding more salt and pepper as desired.
  • Serve immediately, garnished with fresh basil leaves.

Notes

For added protein, consider adding grilled chicken or chickpeas.
