A warm and spicy soup combining sweet potatoes, garlic, and chillies for a comforting meal.

Ingredients

Vegetables

  • 2 large sweet potatoes, peeled and diced
  • 4 cloves garlic, minced
  • 1 onion onion, chopped
  • 1-2 red chillies red chillies, chopped (adjust to taste)
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh coriander for garnish

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onion until translucent, then add garlic and chillies, cooking for 2 minutes.
  • Add diced sweet potatoes and cook briefly.
  • Pour in vegetable broth, bring to a boil, then simmer for 20-25 minutes until tender.
  • Puree the soup until smooth, season with salt and pepper, then serve hot with coriander if desired.

Notes

Adjust chillies to your preferred spice level.
