Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes (baked and mashed)
  • 1.5 cups all-purpose flour
  • 1 egg egg
  • 1 teaspoon salt
  • 0.25 teaspoon nutmeg (optional)

Instructions 

  • Bake sweet potatoes at 400°F (200°C) until tender, then cool and mash.
  • Mix mashed sweet potatoes with egg, salt, and nutmeg.
  • Gradually add flour to form a soft dough, then roll into ropes and cut into pieces.
  • Shape gnocchi with a fork and boil until they float, about 2-3 minutes.
  • Remove with a slotted spoon and serve with sauce.

Notes

For extra flavor, serve with sage butter or your favorite sauce.
