Ingredients

Sweet Potatoes

  • 2 large sweet potatoes (washed, peeled, sliced or cubed)
  • 1 cup pomegranate seeds
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/4 cup chopped nuts (e.g., walnuts or pecans)
  • optional fresh mint for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Peel and slice sweet potatoes, then arrange on a parchment-lined baking sheet.
  • Drizzle with honey or maple syrup and sprinkle cinnamon, then bake for 25-30 minutes.
  • Toast nuts in a dry skillet until golden, about 3-5 minutes.
  • Transfer sweet potatoes to a serving dish, top with pomegranate seeds and toasted nuts, and garnish with mint if desired.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of yogurt before serving.
