Instructions
Preheat oven to 400°F (200°C).
Peel and slice sweet potatoes, then arrange on a parchment-lined baking sheet.
Drizzle with honey or maple syrup and sprinkle cinnamon, then bake for 25-30 minutes.
Toast nuts in a dry skillet until golden, about 3-5 minutes.
Transfer sweet potatoes to a serving dish, top with pomegranate seeds and toasted nuts, and garnish with mint if desired.
