Ingredients
Rice and Broth

uncooked white rice

water or chicken broth

Meat and Seasoning

ground beef or turkey
(Turkey for a lighter option)

taco seasoning
(About 1 oz.)
Vegetables and Toppings

15 oz black beans
(Drained and rinsed)

corn
(Frozen or canned)

diced tomatoes
(Fresh or canned)

shredded lettuce

shredded cheddar cheese

salsa

Instructions
Cook rice in water or broth until tender, about 15 minutes.
In a skillet, heat olive oil and cook ground meat until browned, then add taco seasoning and cook for another 5 minutes.
Warm the black beans and corn separately.
Assemble bowls with rice, seasoned meat, beans, corn, tomatoes, lettuce, cheese, and salsa. Garnish with cilantro and lime if desired.
