This refreshing avocado salad is packed with flavor and perfect for any occasion.

Ingredients

  • 2 ripe avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (finely chopped)
  • 1 cucumber (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (juiced)
  • 3 tbsp olive oil
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the diced avocados, halved cherry tomatoes, finely chopped red onion, and diced cucumber.
  • Add the chopped cilantro to the bowl.
  • In a separate small bowl, whisk together the lime juice and olive oil until well combined.
  • Pour the lime and olive oil dressing over the salad ingredients.
  • Gently toss the salad to combine all ingredients without mashing the avocados.
  • Season with salt and pepper to taste.
  • Serve immediately or chill for 15 minutes before serving for enhanced flavors.
