A refreshing and creamy salad featuring cucumbers and tomatoes, perfect for summer gatherings.

Ingredients

  • 2 cup cucumbers (diced)
  • 2 cup tomatoes (diced)
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp garlic powder
  • salt (to taste)
  • pepper (to taste)
  • fresh dill or parsley (for garnish)

Instructions 

  • In a large mixing bowl, combine the diced cucumbers, diced tomatoes, and chopped red onion.
  • In a separate bowl, mix together the sour cream, mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper until smooth.
  • Pour the creamy dressing over the cucumber and tomato mixture and toss gently to combine.
  • Taste and adjust seasoning if necessary.
  • Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • Before serving, garnish with fresh dill or parsley.

Notes

For a lighter version, you can substitute Greek yogurt for sour cream.
