Ingredients

Wet Ingredients

  • 1 cup canned pumpkin puree
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup dark chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix pumpkin, honey, coconut oil, eggs, and vanilla until smooth.
  • Combine dry ingredients in a separate bowl.
  • Gradually add dry to wet, mixing until just combined. Fold in nuts and chocolate chips if desired.
  • Scoop batter into muffin tin and bake for 18-20 minutes. Cool before serving.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
