Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin.
Mix pumpkin, honey, coconut oil, eggs, and vanilla until smooth.
Combine dry ingredients in a separate bowl.
Gradually add dry to wet, mixing until just combined. Fold in nuts and chocolate chips if desired.
Scoop batter into muffin tin and bake for 18-20 minutes. Cool before serving.
Notes
For extra flavor, add a sprinkle of cinnamon on top before baking.
