Ingredients

Pasta

  • 8 ounces pasta (fusilli or rotini)

Vegetables and cheese

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 diced bell pepper
  • 0.5 red onion red onion, thinly sliced
  • 0.5 cup black olives, sliced
  • 0.5 cup mozzarella balls or cubed mozzarella
  • 0.25 cup grated parmesan cheese
  • 0.5 cup italian dressing

Seasonings

  • to taste salt and pepper salt and pepper

Garnish

  • optional fresh basil fresh basil for garnish

Instructions 

  • Cook pasta until al dente, then rinse with cold water and drain.
  • Combine cooled pasta with cherry tomatoes, cucumber, bell pepper, red onion, olives, and mozzarella in a large bowl.
  • Pour Italian dressing over the mixture and toss gently to coat.
  • Add salt and pepper to taste, then chill for at least 30 minutes before serving.
  • Garnish with fresh basil if desired before serving.
