A delicious vegan Wellington perfect for holiday celebrations, packed with savory mushroom and spinach filling wrapped in flaky puff pastry.

Ingredients

Dough

  • 1 sheet vegan puff pastry (thawed if frozen)

Filling

  • 2 cups mushrooms (finely chopped)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup spinach (chopped)
  • 0.5 cup walnuts (chopped)
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • to taste salt and pepper
  • 1 tbsp plant-based milk (for brushing)

Optional

  • as needed vegan gravy or cranberry sauce (for serving)

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cook diced onion and garlic in olive oil until translucent, then add mushrooms and cook until browned. Stir in soy sauce, salt, and pepper.
  • Remove from heat, stir in spinach and walnuts, and let cool slightly.
  • Roll out puff pastry, place filling in center, fold and seal edges with plant-based milk.
  • Brush top with plant-based milk, bake for 25-30 minutes until golden. Rest briefly before slicing and serving with vegan gravy or cranberry sauce.

Notes

Ensure the filling is cooled before wrapping to prevent sogginess.
