A delicious vegan Wellington perfect for holiday celebrations, packed with savory mushroom and spinach filling wrapped in flaky puff pastry.
Ingredients
Dough

vegan puff pastry
(thawed if frozen)
Filling

cups
mushrooms
(finely chopped)
1
small
onion
(diced)
2
cloves
garlic
(minced)
1
cup
spinach
(chopped)

cup
walnuts
(chopped)

tbsp
soy sauce or tamari
1
tbsp
olive oil
to taste
salt and pepper
1
tbsp
plant-based milk
(for brushing)
Optional

vegan gravy or cranberry sauce
(for serving)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cook diced onion and garlic in olive oil until translucent, then add mushrooms and cook until browned. Stir in soy sauce, salt, and pepper.
Remove from heat, stir in spinach and walnuts, and let cool slightly.
Roll out puff pastry, place filling in center, fold and seal edges with plant-based milk.
Brush top with plant-based milk, bake for 25-30 minutes until golden. Rest briefly before slicing and serving with vegan gravy or cranberry sauce.
Notes
Ensure the filling is cooled before wrapping to prevent sogginess.
