  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup chicken broth
  • 1 cup mixed vegetables (frozen or fresh)
  • optional fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Heat olive oil in an oven-safe skillet and sear chicken skin-side down for 5-7 minutes.
  • Flip chicken, add broth, and vegetables around it. Season with garlic powder, paprika, salt, and pepper.
  • Transfer skillet to oven and bake for 25-30 minutes until cooked through.
  • Rest for a few minutes, garnish with parsley if desired, and serve.
