Ingredients

  • 2 medium ripe tomatoes, diced
  • 1 medium cucumber, diced
  • 1 ripe avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large mixing bowl, combine the diced tomatoes, cucumber, avocado, and red onion.
  • Add the chopped cilantro to the bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad ingredients and gently toss to combine.
  • Serve immediately or chill in the refrigerator for 15 minutes before serving.
