A refreshing salad featuring cherry tomatoes, cucumber, and mozzarella, perfect for summer.

Ingredients

  • 2 cup cherry tomatoes (halved)
  • 1 large cucumber (diced)
  • 8 ounce fresh mozzarella balls (drained)
  • 1/4 cup fresh basil leaves (torn)
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the halved cherry tomatoes and diced cucumber.
  • Add the fresh mozzarella balls and torn basil leaves to the bowl.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Pour the dressing over the salad and gently toss to combine all the ingredients.
  • Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

For added flavor, consider adding a pinch of garlic powder or red pepper flakes.
