A refreshing and healthy salad made with fresh tomatoes, cucumbers, and a light dressing.

Ingredients

  • 2 large ripe tomatoes, diced
  • 1 medium cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the diced tomatoes, cucumber, and red onion.
  • Add the chopped parsley to the bowl and gently mix the ingredients together.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss to combine thoroughly.
  • Serve immediately or refrigerate for 15 minutes to let the flavors meld.

Notes

For added flavor, consider adding feta cheese or olives.
