A refreshing and healthy salad made with fresh tomatoes, cucumbers, and a light dressing.
Ingredients

large ripe tomatoes, diced

medium cucumber, diced
1/4
red onion, thinly sliced
1/4

fresh parsley, chopped

extra virgin olive oil

apple cider vinegar
salt
(to taste)
pepper
(to taste)
Instructions
In a large bowl, combine the diced tomatoes, cucumber, and red onion.
Add the chopped parsley to the bowl and gently mix the ingredients together.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
Pour the dressing over the salad and toss to combine thoroughly.
Serve immediately or refrigerate for 15 minutes to let the flavors meld.
Notes
For added flavor, consider adding feta cheese or olives.
