Ingredients

  • 4 medium ripe tomatoes (diced)
  • 3 clove garlic (minced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh basil (chopped)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the diced tomatoes, minced garlic, and chopped red onion.
  • Add the chopped basil to the bowl and mix gently.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Pour the dressing over the tomato mixture and toss to combine.
  • Let the salad sit for about 10 minutes to allow the flavors to meld before serving.

Notes

For added flavor, consider using heirloom tomatoes or adding feta cheese.
