A refreshing and nutritious salad featuring chickpeas, cherry tomatoes, and mozzarella, perfect for a light meal or side dish.

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 2 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved or quartered)
  • 1/4 red onion finely chopped
  • 1/4 cup fresh basil leaves (chopped)
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large mixing bowl, combine the drained chickpeas, halved cherry tomatoes, and mozzarella balls.
  • Add the finely chopped red onion and fresh basil to the bowl.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Pour the dressing over the salad and gently toss until everything is well coated.
  • Taste and adjust seasoning if necessary, then serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
