Ingredients

Batter

  • 1 cup chickpea flour
  • 1 cup water
  • 1 tablespoon nutritional yeast
  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped onions
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped mushrooms
  • 2 tablespoons olive oil

Garnish

  • fresh herbs for garnish (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix chickpea flour, water, nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper until smooth.
  • Sauté onions and bell peppers in olive oil until softened, then add mushrooms, spinach, and tomatoes; cook 3-4 minutes.
  • Pour batter over vegetables in skillet, cook 5 minutes, then transfer to oven and bake 20-25 minutes.
  • Let cool slightly, garnish with herbs if desired, and serve warm.

Notes

You can customize the vegetables and herbs for variety.
