Ingredients
Batter

chickpea flour

nutritional yeast

turmeric powder

Instructions
Preheat oven to 375°F (190°C).
Mix chickpea flour, water, nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper until smooth.
Sauté onions and bell peppers in olive oil until softened, then add mushrooms, spinach, and tomatoes; cook 3-4 minutes.
Pour batter over vegetables in skillet, cook 5 minutes, then transfer to oven and bake 20-25 minutes.
Let cool slightly, garnish with herbs if desired, and serve warm.
