A quick and creamy baked pasta dish combining tender chicken, broccoli, and cheese for a comforting meal.

Ingredients

Protein

  • 400 g chicken tenderloin (cut into 1.5cm pieces)
  • 1 tsp dried thyme (or other herbs/spices)

Pasta

  • 250 g spiral pasta (uncooked)
  • 1/4 cup flour (all purpose/plain)
  • 1.5 cups chicken broth (warmed)
  • 2 cups milk (warmed)
  • 1 large garlic clove (minced)
  • 2 tbsp unsalted butter (optional)

Vegetables

  • 1 large broccoli (or 2 medium, broken into florets)
  • 1.5 cups shredded cheddar or colby cheese (or tasty cheese, pizza mix)

Instructions 

  • Preheat oven to 200°C/390°F. Toss chicken with salt, pepper, thyme.
  • Spread pasta in a baking dish, sprinkle flour, then pour in milk and broth. Add garlic and butter, stir.
  • Top with chicken and broccoli, cover with foil, and bake for 15 minutes.
  • Remove foil, stir in most cheese, then top with remaining cheese. Bake for another 15-20 minutes until golden.
  • Let stand a few minutes, then serve immediately.

Notes

Ensure milk and broth are warmed for best results.
