Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Wet ingredients

  • 1 cup almond milk (or any plant-based milk)
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar

Add-ins

  • 1/2 cup chopped spinach
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 1 tablespoon nutritional yeast (optional)

Instructions 

  • Preheat oven to 375°F (190°C) and prepare muffin tin.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients in another bowl.
  • Combine wet and dry, then fold in add-ins.
  • Spoon batter into muffin tin and bake for 20-25 minutes.
  • Cool before serving.

Notes

Use fresh spinach for best flavor.
