A delicious and healthy vegan dish featuring roasted acorn squash filled with a flavorful quinoa and vegetable stuffing.
Ingredients
Vegetables and Grains

acorn squashes, halved and seeded

olive oil

onion, chopped

garlic, minced

cooked quinoa or rice

chopped kale or spinach

dried cranberries or raisins

salt and pepper

maple syrup or balsamic glaze

Instructions
Preheat oven to 400°F (200°C). Brush squash halves with 1 tbsp olive oil, season with salt and pepper, and roast for 40-45 minutes.
Cook onion until translucent, add garlic, then stir in cooked grains, greens, cranberries, and nuts. Heat through.
Fill roasted squash halves with the stuffing mixture.
Bake stuffed squash for an additional 10 minutes. Drizzle with maple syrup or balsamic glaze if desired, then serve.
Notes
For extra flavor, add a splash of lemon juice or your favorite herbs.
