A quick and flavorful vegan dish featuring rice noodles and colorful vegetables in a savory teriyaki sauce.

Ingredients

Main ingredients

  • 200 g rice noodles
  • 1 tablespoon sesame oil
  • 1 piece bell pepper (sliced)
  • 1 piece carrot (julienned)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions green onions (chopped)
  • 0.25 cup teriyaki sauce
  • 2 tablespoons sesame seeds
  • fresh cilantro cilantro for garnish

Instructions 

  • Cook the rice noodles according to package instructions, then drain and set aside.
  • Heat sesame oil in a large skillet over medium heat.
  • Add vegetables and stir-fry for 5 minutes until tender-crisp.
  • Add noodles and teriyaki sauce; toss to combine and heat through.
  • Sprinkle with sesame seeds and green onions, then serve garnished with cilantro.

Notes

For extra flavor, add a splash of lime juice before serving.
