Ingredients

Vegetables

  • 1 small head cabbage, chopped
  • 1 medium head cauliflower, chopped
  • 1 large onion, diced
  • 2 carrots sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions 

  • Combine chopped cabbage, cauliflower, onion, carrots, celery, and garlic in a crockpot.
  • Add vegetable broth and diced tomatoes with juice.
  • Stir in thyme, oregano, salt, and pepper. Drizzle with olive oil if desired.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  • Adjust seasoning and serve hot.
