A flavorful and healthy dish featuring a whole roasted cauliflower topped with creamy tahini sauce, perfect for a satisfying vegetarian main or side.

Ingredients

Main

  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon garlic powder

for the tahini sauce:

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water (more if needed)
  • 1 garlic clove minced garlic
  • to taste salt

garnish

  • for garnish fresh parsley (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Remove leaves and trim stem of cauliflower.
  • Mix olive oil, salt, black pepper, smoked paprika, and garlic powder. Brush onto cauliflower.
  • Roast cauliflower on a baking sheet for 45-60 minutes until golden and tender.
  • Whisk tahini, lemon juice, garlic, and water until smooth. Season with salt.
  • Transfer cauliflower to a platter, drizzle with tahini sauce, garnish with parsley, and serve warm.

Notes

For extra flavor, sprinkle with additional herbs or spices.
