Ingredients

Vegetables

  • 1 small head green cabbage, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 bell pepper chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt and pepper salt and pepper
  • optional fresh herbs for garnish

Instructions 

  • Sauté diced onion and minced garlic until translucent.
  • Add carrots, celery, and bell pepper; cook for 5 minutes.
  • Stir in cabbage, tomatoes, broth, thyme, and oregano; bring to a boil.
  • Reduce heat and simmer for 30 minutes until vegetables are tender.
  • Season with salt and pepper; serve hot with optional herbs.
