A delicious and easy zucchini casserole topped with savory stuffing, perfect for a comforting family meal.

Ingredients

Vegetables

  • 6 cups zucchini (sliced)
  • 1 cup onion (chopped)
  • 1 cup carrots (shredded)

Dairy & Canned Goods

  • 1 cup sour cream
  • 10.5 ounce can cream of chicken soup

Stuffing & Butter

  • 6 ounce box Stove Top stuffing (chicken flavor)
  • 1/2 cup butter (softened)

Instructions 

  • Boil zucchini and onions in salted water for 3-5 minutes, then drain.
  • Mix shredded carrots, sour cream, and cream of chicken soup; add zucchini and onions, then combine.
  • Mix stuffing with softened butter; spread half in a 9x13-inch dish.
  • Layer vegetable mixture over stuffing, then top with remaining stuffing. Bake at 350°F for 25 minutes.

Notes

For a healthier option, use low-sodium soup and reduce butter slightly.
