Ingredients

Vegetables

  • 3 medium zucchinis, ends trimmed

Dairy

  • 2 tbsp butter
  • ¾ cup heavy cream
  • 1 cup shredded Parmesan cheese (plus extra for garnish)

Meat

  • 2 boneless, skinless chicken breasts chicken breasts, thinly sliced

Seasonings

  • 1 tsp kosher salt (plus more to taste)
  • 1 tsp freshly ground black pepper (plus more to taste)
  • 3 cloves garlic, minced

Herbs

  • 2 tbsp fresh parsley, chopped (plus extra for garnish)

Instructions 

  • Spiralize zucchinis into noodles and set aside.
  • In a large skillet, melt butter over medium heat and cook sliced chicken until browned and cooked through.
  • Add minced garlic, salt, and pepper; cook for 1 minute until fragrant.
  • Pour in heavy cream and bring to a simmer; stir in Parmesan cheese until melted and smooth.
  • Add zucchini noodles and chopped parsley; toss to coat and cook for 2-3 minutes until noodles are tender.

Notes

Use a spiralizer for best results and serve immediately for a fresh taste.
