- 8 oz pasta (penne or fettuccine)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 1 tsp dried oregano
- 1 tsp sugar
- Salt and pepper (to taste)
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup grated Parmesan cheese
- Extra basil leaves (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the diced tomatoes (with their juices), heavy cream, oregano, and sugar. Season with salt and pepper. Bring the mixture to a gentle simmer.
- Reduce the heat and let the sauce simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.
- Add the cooked pasta to the skillet and toss to coat the pasta well in the creamy sauce.
- Stir in the chopped basil and grated Parmesan cheese until well combined. Cook for an additional 2 minutes to heat through.
- Serve the pasta hot, garnished with extra basil leaves and more Parmesan cheese if desired.
