This quick and healthy teriyaki chicken rice bowl is perfect for busy nights, combining flavorful chicken, steamed vegetables, and hearty brown rice.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup teriyaki sauce

Carbohydrates

  • 2 cups cooked brown rice

Vegetables

  • 1 cup steamed broccoli
  • 1 cup shredded carrots

Garnish

  • 2 green onions sliced green onions
  • 1 tablespoon sesame seeds (optional)
  • to taste salt and pepper
  • 1 tablespoon vegetable oil

Instructions 

  • Heat vegetable oil in a skillet, season chicken with salt and pepper, then cook for 5-7 minutes per side.
  • Add teriyaki sauce to the chicken and cook for 2-3 minutes until thickened.
  • While chicken cooks, prepare rice and steam broccoli and carrots.
  • Slice cooked chicken into bite-sized pieces, then assemble bowls with rice, chicken, vegetables, and garnish with green onions and sesame seeds.

Notes

For extra flavor, marinate chicken in a little soy sauce before cooking.
